- Lime juice¾ oz2,5 cl
- Honey syrup½ oz1,5 cl
- Mint leaves10

METHOD
- Grab a highball glass.
- Add 10 mint leaves.
- Pour in the lime juice.
- Pour in the honey syrup.
- Muddle gently (press, don't shred).
- Fill the glass with crushed ice.
- Pour in the aged rum.
- Top with ginger ale.
- Give it a quick stir.
- Garnish with a mint sprig.
