Passion Fruit Mojito

INGREDIENTS

• White rum1¾ oz5 cl
• Lime juice¾ oz2 cl
• Passion fruit syrup¾ oz2 cl
• Passion fruit purée1 oz3 cl
• Mint leaves10
• Club soda2 oz6 cl
• Passion fruit, mint sprigGarnish

METHOD

1. Grab a highball glass.
2. Add 10 mint leaves.
3. Pour in the lime juice.
4. Pour in the passion fruit syrup.
5. Pour in the passion fruit purée.
6. Muddle gently (press, don't shred).
7. Fill the glass with crushed ice.
8. Pour in the white rum.
9. Top with club soda.
10. Give it a quick stir.
11. Garnish with passion fruit.
12. Garnish with a mint sprig.
