• Mezcal1 oz3 cl
• Overproof rum (Jamaican)½ oz1,5 cl
• Falernum½ oz1,5 cl
• Lime juice¾ oz2,5 cl
• Simple syrup½ oz1,5 cl
• Maraschino¼ tsp1 ml
• Egg white¾ oz2 cl

METHOD

1. Chill a coupe.
2. Add mezcal to the shaker.
3. Add overproof rum to the shaker.
4. Add falernum to the shaker.
5. Add lime juice to the shaker.
6. Add simple syrup to the shaker.
7. Add maraschino to the shaker.
8. Add egg white to the shaker.
9. Dry shake (no ice) (this builds the foam).
10. Add ice.
11. Shake hard (10–15 seconds).
12. Strain into the chilled glass.
