INGREDIENTS
- Gin1½ oz4,5 cl
- Sweet vermouth¾ oz2,3 cl
- Pineapple juice½ oz1,5 cl
- Grenadine¼ oz7,5 ml
- Egg white½ oz1,5 cl
- Pineapple wedgeGarnish

- Dry shake + shaken
- Base

METHOD
- Chill a coupe.
- Add gin to the shaker.
- Add sweet vermouth to the shaker.
- Add pineapple juice to the shaker.
- Add grenadine to the shaker.
- Add egg white to the shaker.
- Dry shake (no ice) (this builds the foam).
- Add ice.
- Shake hard (10–15 seconds).
- Strain into the chilled glass.
- Garnish with a pineapple wedge.
