Absinthe Suissesse

INGREDIENTS

• Absinthe1½ oz4,5 cl
• Crème de menthe (white)½ oz1,5 cl
• Orgeat (almond syrup)¼ oz1 cl
• Orange flower water2 dashes
• Egg white1 oz3 cl
• Heavy cream1 oz3 cl

Dry shake + shaken

METHOD

1. Grab a rocks glass.
2. Add absinthe to the shaker.
3. Add crème de menthe to the shaker.
4. Add orgeat to the shaker.
5. 2 dashes of orange flower water.
6. Add egg white to the shaker.
7. Add heavy cream to the shaker.
8. Dry shake (no ice) (this builds the foam).
9. Add ice.
10. Shake hard (10–15 seconds).
11. Fill the glass with ice.
12. Strain over fresh ice.
