- Simple syrup¼ oz1 cl
- Egg white¾ oz2 cl

- Dry shake + shaken

METHOD
- Grab a rocks glass.
- Add amaretto to the shaker.
- Add lemon juice to the shaker.
- Add simple syrup to the shaker.
- Add egg white to the shaker.
- Dry shake (no ice) (this builds the foam).
- Add ice.
- Shake hard (10–15 seconds).
- Fill the glass with ice.
- Strain over fresh ice.
- Garnish with an orange slice.
- Garnish with a cocktail cherry.
