INGREDIENTS
- Rye whiskey1½ oz4,5 cl
- Pineapple juice1 tsp5 ml
- Simple syrup¼ oz7,5 ml
- Maraschino½ tsp2,5 ml
- Angostura bitters1 dash
- Champagne1 oz3 cl
- Pineapple chunk1
- Pineapple wedge, cocktail cherryGarnish

METHOD
- Chill a coupe.
- Add 1 pineapple chunk.
- Muddle in the shaker (gently, just release the aroma).
- Fill the shaker with ice.
- Add rye whiskey to the shaker.
- Add pineapple juice to the shaker.
- Add simple syrup to the shaker.
- Add maraschino to the shaker.
- A dash of Angostura bitters.
- Shake hard (10–15 seconds).
- Strain into the chilled glass.
- Top with champagne.
- Garnish with a pineapple wedge.
- Garnish with a cocktail cherry.
